What would be the best gopro camera and accessories (or equivalent) to use in speedway? Mainly contact and open wheel classes..

Any go pro would be fine!! Although the more you spend the better the quality and the end of the day, I would recommend mounting it right out of harms way tho! Have lost two cameras of the front of a sprintcar front wing, and a sone right through one on the roof of a super saloon.. The glass lenses and case lenses don't take well do stones !! Although I was asked recently by a SNZ offical to only mount inside of the car as they are in car cameras ? Whether this is a new rule or I was just oblivious ! I use the go pro suction cup mount and it works fine ! i cable tie a safety state to the closest roll cage or similar as extra security ! You can also buy roll bar mounts that work a treat as wel!

Has anyone used any of the cheaper makes that are sold from the likes of Jay Car? Are they any good?

We use Replay XD mini cameras - really good quality and I think around $300 bucks for the basic model. they have all sizes chassis mount accessories, so we mount them above the front and rear suspension when we try out new set ups to see what is going on with suspension travel and angles. We also mount them up in the roll cage just next to the drivers helmet for 'race footage'.
They are pretty good - we are sponsored by Replay XD, but they are actually really good for the price!

Just a little note on cameras. SNZ are cracking down on the ( Red Light) on these cameras. A little piece of tape fixes the problem.

You can turn them off on Hero2 as well, it's one of the first things I do to mine. Also definitely tether them to the car somehow, I've had several connectors break and one time the camera came back dangling on the end of the lanyard. That was actually the first day I tied them to the car so I thought that was good timing. If anything is going to snap it will be the end of a long connector (with the two round bits that fit into the bracket). The camera is waving around at one end of it, the other end is solidly attached to the car, the constant flexing just snaps them eventually. Normally only one of the two round ends snaps off so the camera doesn't actually fall out, it just moves around a lot. Here's a jpeg I did of how to attach tethers to the cases (it's the case you need to attach, not the bracket).

Obviously constitutes a danger in the eyes/mind of someone?

We see pretty much every brand used in drift
I'd say hero 4 silver is the pick currently as unless you are pretty good with editing you don't need the extra features of the black . Built in display is good for checking angles without connection to phone
Garmin mapping is kinda interesting, but I imagine boring x 8-12 laps of the same oval
Sonys are ok, but were prone to fogging ( you can kinda fix it with a shoe box silica packet ) and the shape has pluses
